Tom Driscoll is the associate director of university housing and director of dining services. He leads the operations of dining services for housing residential dining, EMU retail dining, and UO catering and conference services.
Prior to joining the UO, Tom spent 20 years in the restaurant industry in California, Washington, and Oregon. Tom brings his restaurant expertise to University of Oregon campus dining through a high-level cuisine and service approach. Tom is active in the National Association of College and University Food Services, serving on national and regional committees. He also represents university housing as a board member for the Lane County Visitors Association, as well as the American Culinary Federation.
Tom is a California native and graduate of San Francisco State University. He and his family made Oregon home upon arriving at the UO in 2000. Tom loves food and cooking, particularly trying new recipes and ideas. He also loves being outdoors, whether it’s hiking, road biking, fly fishing, or cross-country skiing.
